I had the same problem with [My shop] on all emails, your solution did not work but I found another solution:
To rename it, you’ll need to jump through some hoops.
enable multistore – Shop Parameters > General > Enable Multistore
go to Advanced Parameters > Multistore
find your store, change its name, and save
disable mutlistore again
This worked!! (just for your info)
